00Chicken & Chorizo TraybakeTraybakes are fab. They save on time,dishes and are minimum prep so they're a great midweek option. I've used a mix of chicken pieces in this recipe-drumsticks and thighs but you could use breast or quarters. This would also work well with Turkey steaks or with Pork chops. You can tailor it to suit your families tastes by adding a little chilli or a different vegetable too. I just used up what I had in the fridge. 00Cream of Celery SoupCream of Celery soup is a new favourite for me. I received 2 lots of Celery in my shopping and thought "What am I going to use all this for?" and Soup was an easy option. This is as filling as it is tasty, and really nice cold too, so would be a lovely change on a warm summer day. Its also low in calories and packed full of vitamins, so whats not to likely? 00Vegetable KormaWe do love a curry and a Korma is one of our favourites. It's mild creamy sweetness is family friendly and you can adjust the heat to the levels you like. I've paired back the spices as I find that Garam Masala contains most of the main ingredients you'll find in most Korma recipes. This of course makes it more purse friendly, but we have a Korma paste recipe on the website if you'd rather use that. This vegetable korma is filling and flavoursome. 00Chicken Tikka MasalaRumour has it that the Tikka Masala we all know and love, was 1st served in Glasgow. The chef was almost finished for the evening but a late request had him scrambling for ingredients to make a curry. He combined the Tikka spices with a can of tomato soup and some cream and Voilà he had a mild fragrant curry. The customer loved it. No matter if you believe this or not, I'm sure you will love this recipe for the same reasons. I've paired down the ingredients of the Tikka paste to what I had in, plus what I've used in the past, so if you don't have an ingredient don't worry too much, just add something else.. 00Tomato, Beetroot & Chilli SoupThis was one of those happy accidents lol. I was making my tomato soup (recipe on the website) when I spied the pack of beetroot in the fridge and thought "oh, that needs using up....I wonder ?" and so I made a nice discovery, because it did work. It's not a traditional Borscht by any means but its no less delicious. Its also an easy way to get more hidden veg into the children and adults because you can add any other veg you like such as peppers, blend it down completely and they will never know. I like it a little chunky so I add some of the chopped beetroot and grated carrot near the end of the cooking process....I think it looks nicer too. This is warming, filling and easy to make. I love the colour as it changes from bright red to deep burgundy.Its also easy to adapt to suit you and your families tastes. Dont like it spicy? Omit the chilli. Dont like the lentils? 00Sweet & Spicy Asian MeatballsMeatballs are a staple dish in most households, especially if you have children. Yes,you can do the classic marinara or bbq sauce with them but I like to change it up a bit and decided on this lovely sweet & spicy sauce instead. I'm sure your family will love it. 00Halogen Baked SalmonWe don't often do meals for one but I thought I'd do this as I managed to get this lovely piece of salmon, and thought it was a perfect time to go back to basics. Obviously you can multiply this for 2 or 4 by increasing the quantity of Salmon you buy. I've kept it very simple as fresh Salmon doesn't need a lot of fuss. 00Chinese style RibsI love BBQ Ribs but sometimes I like to make a slightly different marinade that gives more of a warmth to the meat than the sweetness of bbq sauce. I find parboiling the ribs beforehand cuts down the oven time and makes them softer and less dry but you can skip this step if you like.. This recipe is for 1 person but its easy to adapt to feed you and your family...just multiply the ingredients. Its also easy to adapt to their taste too...dont have 5 spice? 00Slow Cooked Butternut Squash & Chilli SoupThere's nothing nicer than a warming bowl of soup that's full of flavour and a little hint of spice on a cold day. This one is easy to do as you pop everything into the slow cooker and let it do the work then come back to whizz it with the blender and serve. This can be adjusted to suit your families tastes-leave out the spices if they're not keen or add more if you like a bit of a kick. The choice is yours.
