00Chilli TacosChilli Tacos are a favourite in most homes.This is an easy beef taco recipe that shows you how to make tacos with ingredients you have in your cupboard and fridge. I didn't have tinned tomatoes so used passata, I didn't have fresh veg apart from 1/2pk of stir fry so used that ....you get the drift. You can make it as spicy as you like or keep it cool with some sour cream dip. The choice is yours. Tacos are crunchy, messy and great fun to eat...you can let the family assemble them whichever way they like or do the assembly yourself. Either way a bib is a must lol. 00StuffingI'm just going to say it. I don't like stuffing. Its bland, stodgy and mushy or heaven forbid, rubbery. But I do like my version which is full of yummy chestnuts,sausage meat and cranberries. This is requested every year by my family so I make 2 or sometimes 3 batches so we have enough to eat with our Christmas Dinner plus breakfast on Boxing day as well - it's yummy cold on toast! This recipe is so easy and adaptable that you can tailor it for you and your families tastes. You can pair this right back and just do the sausage meat and stuffing on its own or leave out what you don't like and add in what you do. The choice is yours. This is great to cook and freeze beforehand too so saving you time on the big day. You can also roll into individual balls if you prefer. 00Steak with a honey mustard sauceRump Steak is a slightly cheaper cut of beef that makes it affordable but no less flavourful than the more expensive cuts. In fact some would say it gives the best flavour. This dish is perfect for date night, birthdays or just as a treat after a hard week. It's quick to cook and needs very little prep which is a bonus! I've kept it relatively simple with just a few ingredients in the sauce, as once it's reduced the flavours intensify. You can of course serve it with a different sauce if you prefer and just follow the guidelines on cooking the steak itself, the same applies to the mushrooms-onions work well with this too. The choice is yours. The timings are for a medium cooked Steak but you can adjust this to suit your tastes ( 2mns each side for rare and 4 mns each side for well done depending on the thickness of the meat). 00Halogen baked Cinnamon BunsCinnamon buns or rolls are a sweet roll served commonly In North America and Northern Europe. In N. America it is commonly eaten for breakfast with a cream cheese frosting. In Sweden & Denmark etc they have them sprinkled with sugar at their coffee break. Whichever way you prefer to eat yours they will soon become a family favourite I'm sure as they are they are sweet, sticky and so moreish; oozing with the warming fragrance of cinnamon and versatile enough that you can add other ingredients to the filling etc. I added chopped pecans and sultanas and glazed them with honey as I didnt have apricot jam and it worked really well. I also baked them in the Halogen but you can use a conventional oven also. The method is fairly straightforward but it may seem like a long prep as it calls for 2 proofing stages but it is definitely worth doing so you get a light fluffy dough. 00Bacon Chops in a spicy Cider SauceBacon chops are a boneless, thicker cut of the bacon. Take your weekend fry-up up a notch or enjoy as a tasty alternative to a normal pork chop. They are sometimes called bacon steaks, which are taken from whole bacon loins. In other words, a bacon chop is basically a super thick cut rasher of bacon. It comes from exactly the same place, and is produced the same way, as the bacon you put on your sandwich, it's just, well, thicker and as such can be used for much more than just breakfast. Pairing them with the dry cider, naturally sweet pineapple juice and the fragrant spices gives a lovely flavour to this dish.This is a super easy recipe that your family will love. Its very versatile too as you can easily swap the cider for apple juice and the mushrooms for onions. I've used my Halogen oven to bake it but it works in a conventional oven also. 00Strawberry cheesecake french toast in the slow cookerThis is a very indulgent dish that can be served as a special breakfast / brunch or even a dessert. It is great for using up slightly stale bread although no one would ever know! And they will never guess how easy it is to cook either!
00Custard Cream CheesecakeCustard Cream biscuits are a store cupboard staple in most homes as the creamy custard filling makes them a firm favourite for every generation. As such, I decided to try them in a cheesecake recipe and it was a success! This recipe is super easy to do as its a no bake cheesecake,which is my favourite as there's not much room for error. The biggest problem you'll have is waiting for it to set. I always let my cheesecake set in the fridge overnight, otherwise they risk being a little soft still – you’re more likely to get a better result the longer you leave it! I used biscuits straight from the pkt- the purists would separate them and scrape out the filling-but who has time for that? Save your time and energy for eating them later. I've used a square dish in keeping with the classic biscuit shape and just kept the decoration simple,adding a biscuit on top and a sprinkle of crumb but you could line the sides of your tin with biscuits too if you wish. 00Creamy Vegetable SoupThink you need fresh vegetables to make soup? Think again. I fancied some soup for lunch, but had only a half pack of Country Veg mix in the freezer. I added that to the pot, along with some stock, herbs, spinach and cream cheese and I had a full flavoured pot of soup that fed 4 hungry people for less than a £1. I used a Country veg pack -cauliflower,broccoli, carrots,green beans and peas but you could use any frozen or fresh veg that you have in the house. The beauty of using frozen veg is it's still full of goodness,is quick to cook and just as tasty as fresh. There's no peeling and no need to thaw either, so win win! I also used Porridge Oats to thicken and add a creaminess- you don't taste them at all, but you could use Lentils or Mash potatoes and a touch of cream instead.
