I've used Farfalle(bow ties) pasta as it's what I had in my cupboard as it's very versatile, but any pasta will do. I fried the chorizo to release the lovely smoky paprika flavours and the oils it contains, then used that to fry the onions. This all builds a depth of flavour to the dish. I used cream cheese as the base for the sauce but you can swap that with any sauce you prefer. This dish is easy to prepare and can be adapted to suit you and your families tastes. Using frozen Cod fillets, its relatively cheap and is speedy too, which is always a bonus I love how versatile it is. It has a mild flavor with a flaky consistency. My favorite way to prepare cod is either poached or oven baked. I've served this with salad and crusty bread but it's yummy with rice, especially coconut rice or roast potatoes. Ive used Cod but you could use any white fish, Salmon or even Tuna. It really is versatile and can easily be tailored for you and your families tastes. You can do this in a conventional oven also. They can be eaten just as they are and are particularly popular with children because of their sweet crunchiness and small size. They can be served halved or whole as crudités with other vegetables and a dip.
They can also be boiled,steamed,roasted,grilled,stir fried,microwaved etc. I've chosen to roast them in the Halogen oven but this can be done in a conventional oven too. Whichever way you choose to cook them they are a great addition to a Sunday Roast, a picnic or even to replace potatoes in your usual dinner. I served mine on a bed of Spinach and topped with maple glazed Spare Ribs which was delicious and just shows how versatile the little gems are. 00Creamy Balsamic Glazed ChickenChicken breast fillets are so quick and easy to cook with. They come ready sliced so your just taking them out of the container, seasoning and adding straight into the pan.. They cook in no time so by adding a few ingredients you have a speedy dinner in 20-30mns appr. How good is that?
The sauce is the star of the show here and so delicious I actually wanted to lick my plate lol.
This serves 2 and would be a great date night meal, but you can easily increase the quantities to serve 4 to enjoy with the family.

We love to hear your feedback x00Vegetable soupIt is sometimes getting harder to get bargains nowadays but when you do its a bonus.These soup packs are sold in most supermarkets for 80p-£1 depending on the content. They are also easy to pick up from the reduced section at a fraction of the cost. The problem is they tend to break down pretty quick so if your not going to use it right away throw it in the freezer to use at a later date. But this recipe will give you an idea how to bulk it out a bit so it doesn't get wasted.This pack ( carrot,swede,potato) was reduced to 10p-I added a few extra ingredients to bulk it out a bit and had a filling lunch in no time. I added some porridge oats- (to thicken it) and some milk- (to make it creamy without the calories) - this also combats the vinegar taste these pack have at times. I adjusted the cooking time also as the packet said 15mns but the veg was still hard so needed longer -45 mns appr. I got 4 portions from this and it was delicious and filling. If you wanted to make this vegetarian then omit the bacon and use veg stock in place of chicken. This particular style of potato is so versatile and easy to do- sliced into thin wedges but left joined at the bottom like a concertina, baked until the layers fan out into rounds of crispiness and served as is, or embellished with toppings of your choice. I had a pack of continental meat and some cheese and voila my humble potato was transformed into a feast of mediterranean flavours. This dish started out as a side but quickly became the main meal as I didnt want to spoil it by adding unnecessary extras and I found it so filling too. Its so easy to adapt this recipe to you and your families tastes by substituting the Salami or Chorizo for cooked ham and bacon or the Goats cheese for Cheddar.
