00Marinated Pork ChopsI set out to make a Peking or Char Siu style Marinade for some Boneless Pork Chops I had but, as I quickly discovered, I had no Hoisin, Plum sauce or Rice wine ,so I just used what I had in the cupboard. It worked well and I was not disappointed. Full flavoured, sweet ,tangy and delicious is how I'd describe these chops. The marinade keeps them succulent and stops them from being dry and the salty soy sauce mixed with the sweet chilli sauce gives a slightly tangy sweet n sour taste. 00Three Cheese Vegetable BakeServed on its own or as a side dish accompaniment to Steak, Sausages or Fish this dish does not disappoint. Its cheesy, delicious and very more-ish. A great way of using up all the different bits of vegetables that are laying in the bottom of the fridge or are easily picked up from the reduced counter of the supermarket. I used a bag of casserole veg as my starting point then added some sweet potato,shallots,peppers and peas to it but it's really upto you what you use. I also used a dry soup mix as my base for the sauce as I had no flour. It really is that easy to adapt this and many other recipes. 00Chicken Chasni -ishA Fakeaway Friday Treat. Glasgow is renowned for it's love of curry and it's sweet tooth which is why we love this dish. It combines both and is so moreish. Sweet and tangy with a hint of spice... Just as a good curry should be. Normally I'd use cream but as I didn't have any I tried it with yoghurt and it worked really well.. Its speedy and versatile too as you can easily make it veggie by using Sweet Potato or Cauliflower or swap the chicken for fish or beef. 00Halogen Baked Italian Chicken.Super moist and tasty this chicken dish does not disappoint. Its speedy and simple enough to do, so is perfect for a midweek dinner. Dont let the different steps put you off as it's just a Coat,Fry,Bake process thats easy to do. You could cut out the bake part and just continue frying till fully cooked or vice versa, but I like the crunch that the oven bake gives you. I've used 4 breasts to give 8 pieces in all, but you could easily use 2 breasts to make 4 pieces and cut the costs considerably. The choice is yours. 00Slow Cooker Coconut Rice PuddingCoconut Rice Pudding is a different take on your favourite pud. Its no less creamy or yummy than your regular rice pudding but using the store cupboard staple of long grained white rice instead of pudding rice it slashed the costs. This is sure to become a family favourite. If you can't get Coconut milk you can use a tin of coconut cream and dilute it with regular milk or just use dessicated coconut and cream. 00Risotto with Prosciutto wrapped AsparagusRisotto is my favourite rice dish but I'm the 1st to admit it doesnt photograph well. It more than makes up for that in taste though. This dish is no exception. Cheesy, garlicky and creamy it packs a serous amount of subtle flavours. Paired with the classics of Asparagus,Parmesan and Prosciutto this is a little bit of a treat meal or date night meal. Risotto can be time consuming to cook as normally you would stand over the rice pot and add a little stock and stir then repeat till its gone but I've found it works just as well if you add the stock then cover and leave to cook on its own. 00Halogen Baked Roasted New PotatoesA Halogen Oven is as an energy efficient and healthy alternative to conventional ovens. It doesnt need pre heating so is quicker to cook with too. It can produce the best crispy bacon I've ever tasted as well as yummy Roast and Baked Potatoes as well as anything else you would cook in a conventional oven. These Roast Potatoes are crispy, garlicky and buttery. They are a great addition to a Roast dinner or a salad. They are small and sweet and don't need par boiling before cooking.
