00Haggis NachosNachos are a classic sharing dish to serve up when watching TV with the family. Take some Tortilla chips, add some salsa,guacamole and sour cream...maybe some cheese and jalapeño's or chilli. But why stop there? They can be adapted to your local cuisine by adding one or more ingredients...in this case Haggis! which is a great alternative to mince in Scotland. It adds a lovely flavour and texture to the dish that I think you and the family will love. Don't like Haggis? Swap it for Black Pudding. This may be a good way of introducing Haggis into your repertoire if you've never tried it before. It goes really well with the dips and is definitely a new favourite in my house. 00Cheesy Cauliflower and Bacon BakeThis started off as a side dish but quickly became the main part of the meal. A tasty and speedy alternative to a roast dinner or for any day of the week for that matter. This can easily be adapted to suit your families tastes and budgets. Don't like cauliflower? Use Broccoli or a combination of both. Bulk it out with more veg if you like. You could even swap the bacon for Pork Steaks, Bacon steaks or just bacon off cuts . This only takes 30-45 minutes of your time (30 on a cold day and 45 on a hot summer day), and is just as good as classic puff pastry and tastes downright phenomenal! This method of making puff pastry takes short cuts, cutting down on the time it takes to make puff pastry – thus giving you a “rough” puff pastry.
00Cream of Spinach SoupThis soup was brought about by finding out what I didn't have in the freezer -which was a bag of frozen veg but I had a little bag of steamed veg and set about making it into a lovely lunch by adding little bits of this n that-some peas, some herbs,stock etc and 15mns later I had 2 filling bowls of this. The porridge thickened it and added some creaminess to it. The Spinach added fibre and the chilli a little heat. This can be adapted to feed 4 easily as it is very versatile. You too can easily adapt this to suit your families needs by bulking out with more stock,a little bit more vegetables or some chopped chicken, bacon or crunchy croutons. 00Halogen Roast Duck with stuffing.Duck is not just to have with Chinese pancakes. Its a delicious change to your Roast dinner and is as easy to cook as a chicken. I used a chestnut,cranberry and sausage stuffing (recipe on the website) to fill the cavity but you can just use a standard packet of stuffing mix if you prefer. I served it with the usual accompaniments, roast potatoes, mash, vegetables and a French onion soup gravy that I added some cranberry sauce to. Soup makes a superb gravy and as its already prepared, is a great time-saver. This will be a guaranteed winner with the family. 00King Prawn LinguineThis is my go-to 10minute meal when I don't feel like cooking. There's very little cooking involved so its my version of fast food. Switching my usual spaghetti for Linguine and my usual basic prawns for King Prawns makes this just a little bit special. The creaminess of the soft cheese pairs really well with the Linguine(little tongues) as its known making the sauce rich and silky. This recipe is for 2 people but can easily be adapted to feed 4. 00Cheese,Bacon & Leek Slow Cooked BreadThis recipe came about after my sister had told me she had bought a lovely bread with leeks in, and it was so yummy that I was hankering after it lol. So I had a rummage in the fridge and violà this came about. Now, confession time- I meant to add the cheese into the mix so it would be fully blended at the beginning. but forgot lol. So I added it afterwards and apart from a bit that clumped at one side it worked out OK-proof that its a very forgiving recipe. Baking it in the Slow Cooker helped prove it and made the bread light,airy and moist. The top didn't colour but as its covered in cheese that didn't bother me but you could finish off in the oven for 10mns if you want a more even colour. I proved it twice but you dont have to if you prefer just doing it once, although it helps keep it nice and light...its massive too, which you can't really tell by the pics. You can use any toppings you prefer...swapping the bacon for tomatoes or the leeks for spring onions etc the choice is yours. 00Biscoff PalmiersClassic Palmiers are made with brown sugar-( recipe on the website )- but I thought I'd combine them with my favourite biscuits These worked out really well. Not too sweet but very more-ish.These would be great fun for the children to do during Home Economics? or whatever the cooking at home/school term is nowadays. 00Sticky ChickenI love a fakeaway recipe but had no real idea of what I was making, so just added a bit of this n that, that I had in the cupboards till this came about. This is a bit of a mish mash of two recipes- sweet n sour and teriyaki. It's little sweet, a little tart and a little sticky. I left the sauce a little runny as I like that but if you want it more sticky add a little more honey. If you want a little heat add some chilli flakes. You can fry the chicken before putting into the SC to give a nice coating or finish it off on the hob if you want the sauce really thick and sticky but I thought this was just nice as it was.
