00King Prawn LinguineThis is my go-to 10minute meal when I don't feel like cooking. There's very little cooking involved so its my version of fast food. Switching my usual spaghetti for Linguine and my usual basic prawns for King Prawns makes this just a little bit special. The creaminess of the soft cheese pairs really well with the Linguine(little tongues) as its known making the sauce rich and silky. This recipe is for 2 people but can easily be adapted to feed 4. We love to hear your feedback x 00Cheese,Bacon & Leek Slow Cooked BreadThis recipe came about after my sister had told me she had bought a lovely bread with leeks in, and it was so yummy that I was hankering after it lol. So I had a rummage in the fridge and violà this came about. Now, confession time- I meant to add the cheese into the mix so it would be fully blended at the beginning. but forgot lol. So I added it afterwards and apart from a bit that clumped at one side it worked out OK-proof that its a very forgiving recipe. Baking it in the Slow Cooker helped prove it and made the bread light,airy and moist. The top didn't colour but as its covered in cheese that didn't bother me but you could finish off in the oven for 10mns if you want a more even colour. I proved it twice but you dont have to if you prefer just doing it once, although it helps keep it nice and light...its massive too, which you can't really tell by the pics. You can use any toppings you prefer...swapping the bacon for tomatoes or the leeks for spring onions etc the choice is yours. Not too sweet but very more-ish.These would be great fun for the children to do during Home Economics? or whatever the cooking at home/school term is nowadays. We love to hear your feedback x 00Sticky ChickenI love a fakeaway recipe but had no real idea of what I was making, so just added a bit of this n that, that I had in the cupboards till this came about. This is a bit of a mish mash of two recipes- sweet n sour and teriyaki. It's little sweet, a little tart and a little sticky. I left the sauce a little runny as I like that but if you want it more sticky add a little more honey. If you want a little heat add some chilli flakes. You can fry the chicken before putting into the SC to give a nice coating or finish it off on the hob if you want the sauce really thick and sticky but I thought this was just nice as it was. It can be done in one pan if you have a hob to oven dish but as I dont, I started it off on the hob, then transferred to the oven. This recipe is so versatile and can easily be adapted to suit you and your families tastes.
It can also be converted to a vegetarian meal by using veggie/quorn sausages and stock. Its a good way to use up any vegetables you have in the fridge and even frozen veg can be used. You could add a few chilli flakes too if you want some extra heat to the sauce. Its entirely up to you. I'm sure this will be a family favourite in no time. We love to hear your feedback x00Macaroni Fish PieThis recipe came about whilst I was putting my shopping away and mentally ticking off what each item was for, and yes, I had the fish mix in one hand and the pkt of macaroni in the other and my thoughts collided "Macaroni Fish Pie " I immediately dismissed it as me being daft, but I mentioned it on the fb page and a lovely lady told me it was a thing! So of course I had to try it....and I have to admit I was blown away by it. Its creamy,rich and very filling.As I was writing it out I realised I didn't have mashed potatoes which is my usual go to topping,so added another twist and I topped it with what I did have-Frozen Roast Potatoes. This recipe is really so versatile you can tailor it to suit you and your families tastes. If you don't want to include the macaroni just leave that out or switch it for any pasta mix you do have. It was originally a celebration of harvest, made following the raspberry harvest in June. The dessert of cream and fresh seasonal raspberries is bolstered by Scottish oats and whisky. It has been called 'the uncontested king of Scottish dessert'. I couldn't get raspberries so used mixed berries which works equally well
Its a Scottish version of a trifle really.I've made 3 different versions of this well loved dessert. 1st with whisky, the 2nd with Pink Gin and for the bairns I used raspberry jam. Its so easy to do and so versatile. I made it in my ninja foodi but you could do it in any electric pressure cooker or on the stove. It's sweet but spicy flavour was ideal for us but if you have young kids you may want to cut back slightly on the sriracha (hot sauce).
