00Chicken, Bacon & Leek PieChicken and bacon is a classic combination, add some leek,a bit of mustard and some cheesy mash and you have a warming dinner that ticks all the boxes. I've used chicken breasts as I got them reduced but you could cut the costs further by using thigh instead, or pastry instead of mash etc. You can adapt this to suit you and your families tastes and I'm sure it will become a family favourite in no time. 00Meatball PastiesLeftovers.If like me, you always have a portion of dinner left thats not enough for a meal but you dont want it going to waste then pasties are the answer. I had meatballs leftover from last night's dinner (complete with homemade pasta sauce....passata,garlic,mixed herbs,chilli flakes )- recipe on the website. I added a few other ingredients. . ...mozzarella, bbq sauce and some pastry and made another dinner. These are also great to have as a snack for the kids coming in from school or for watching the footy. They can be frozen and reheated in minutes. 00Salt n Chilli Pork ChopsA speedy midweek dinner thats full of the rich flavour of paprika, with a hint of sweetness and a touch of spice. Think pork chops are dry? There's nothing dry about these pork chops. Marinated and Air fried, these are succulent and melt in the mouth. I've air fried them, but you can do them in the frying pan or oven too. I've sliced them, as It allows you to stretch 3 chops to feed 4 without feeling cheated, but by all means use 4 if your budget can stretch. I've used my own marinade but you use a pre made one if you prefer. 00Pressure cooked Minestrone-ish soupA speedy,full flavoured soup bursting with goodness, warmth and all manner of vegetables. Whilst not authentic, I have made this recipe loads of times, and kept the base the same but adapted the vegetables to whatever I have in at the time, and it never fails to be a hit. You too can add or subtract any vegetables you like to suit you and your families tastes. You can add lentils or beans to bulk it out too. It really is very versatile. I've used the PC part of the Ninja Foodi Multicooker, but this can also be done in an Instant Pot or on the stove. Why not give this a try and let us know how you get on in the comments below. 00Cheesy Leek and Broccoli BakeThis can be a stand alone dish served as a main meal or a side dish to a roast or steak dinner. Its creamy, cheesy comfort food that can be adapted to suit you and your families tastes by using different cheeses. a mild cheddar for a mellow taste or a strong punchy one for a more robust flavour. You can add a little cream for a richer taste or a few chilli flakes for a little heat. You can use fresh or frozen broccoli. The choice is yours. 00Sticky BBQ Beef StewSticky BBQ Beef Stew Sweet spicy smoky beef! Perfect comfort food in cold weather. This may seem like a lot of ingredients, but don't let that put you off. Its mainly just beef, vegetables and some store cupboard herbs and spices that give this stew its deep hearty flavour. If there's something you dont have, then swap for something you do, or leave it out altogether. It's an easy recipe to adapt to suit you and your families tastes. You can add more vegetables or even a tin of beans-(baked, butter or mixed) to bulk it out too. I've used the hob this time but it can also be done in the slow cooker. 00Boozy BeefBoozy Beef served with mashed potatoes and peas is comfort food at it's best. Every party seems to have someone who will leave behind a bottle of dodgy tasting Ale (often low alcohol) that sits in your fridge for all eternity because nobody wants to try it. So here's what to do with it..... I've used Stewing beef (can often be found cheap in the reduced section) but you could use another cut if you prefer. Your house will smell like a brewery but the alcohol will cook off and its fine to serve to the whole family. You can also make this with red wine stock cubes instead of ale. Failing that use Guiness or Stout. I've used Pink Himalayan salt mixed in the flour as I find it has less sodium than table salt but table salt or sea salt is fine to use. Tip- Add streaky bacon at the start and you've got yourself a boeuf bourguignon. This can also be cooked in the Slow Cooker-8 hours on Low or 4-5 hours on high.For cheaper cuts of meat it is best to cook on Low for longer to let the meat soften. A handy hint for cheap cooking wine is don't throw away red wine that's been open a couple of days and tastes like vinegar. It may not be any good for drinking but it will be fine to cook with for weeks as long as the lid is on. You can even add the dregs of another bottle to it. Or freeze it-Pour into Icecube trays, place in the freezer and once frozen store them in a ziplock bag. Why not give this a try and let us know how you get on in the comments below. 00Linguine with Turkey MeatballsA speedy dinner that's warming and full of flavour. Its a 2 step cooking process-airfryer then pressure cook for quickness but still only takes less than 20 minutes. I've used the Ninja Foodi to cook this but it can also be cooked on the hob. I've used Turkey Meatballs as they can frequently be found in the reduced section of the supermarket. They take less time to cook too and makes this for a very economical meal. I used Boursin garlic & herb cream cheese but you can use a supermarket own brand (plain or flavoured if you prefer. I added a grated yellow courgette as you don't taste it, but it helps thicken the sauce and get more nutrients into us too, so win win, but you could use green or leave it out altogether if you prefer.
