Feed Your Family: More From Less. Shop smart. Cook clever.
00Steam and Crisp Roast ChickenThis is my first experience of using the Ninja Foodi to steam and crisp chicken and potato wedges, and it certainly won't be my last. The wedges were the nicest I've tasted and the chicken was delicious with moist meat and a crispy skin just bursting with flavour. I've kept this rather simple, with garlic lemon wedges, and a herby crust on the chicken, but by all means experiment by adding other vegetables to the pot, along with any herbs, spices etc that you prefer. I'm sure all the family will enjoy this recipe as it can be a quick and easy midweek meal or a Sunday dinner.. Why not give this a try and let us know how you get on in the comments below . 00Chicken, Bacon & Leek PieChicken and bacon is a classic combination, add some leek,a bit of mustard and some cheesy mash and you have a warming dinner that ticks all the boxes. I've used chicken breasts as I got them reduced but you could cut the costs further by using thigh instead, or pastry instead of mash etc. You can adapt this to suit you and your families tastes and I'm sure it will become a family favourite in no time. 00Air Fryer Chicken NachosThis recipe is so versatile. It makes for a great midweek dinner....or as one of the best TV snacks ever! Perfect for movie nights, watching the footy in the afternoon, a picnic in the garden, or lounge, if the weather turns cold, or as part of a sharing platter for a midweek feast. I used Chicken but you can totally substitute this for minced beef, pork, or leave it out altogether and just have the classic combo of cheese, tomato salsa, guacamole and sour cream. The choice is yours. You could also use cooked and shredded chicken and miss out the 1st steps altogether. The fajita seasoning mix can be found on the website and at the bottom of the page. It's great to make a batch and keep the remainder for another recipe, or you can use a pre made packet mix. The final stages of the recipe are best cooked in 2 batches as you want nice crunchy Nachos, which you won't get if you crowd the pan - the Air fryer needs to circulate the air to do its job correctly. This stage take minutes so don't worry about not serving it together- just cover the 1st batch with foil for a few minutes and it will be fine. Im sure this will soon be a family favourite that you can adapt to suit your tastes. Why not give this a try and let us know how you get on in the comments below. We love to hear your feedback. Eve x
00Chicken & Mushroom Cacio e PepeThis is a creamy one pot dish thats bursting with flavours. Cacio e pepe sounds posh but it just means "cheese and pepper" Traditionally served mixed through pasta but, as I had none, and in keeping with the ethos of FYF, I substituted it with chicken & mushrooms with a side of New Potatoes. I used a Ninja foodi but this can be done in the oven too. Why not give this a try and let us know how you get on in the comments below. We love to hear your feedback. E x
00Tandoori ChickenTandoori chicken is a chicken dish prepared by roasting chicken marinated in yogurt and spices in a tandoor, a cylindrical clay oven. The dish originated from the Indian subcontinent and is popular in many other parts of the world.  Not many of us have a clay oven but we can replicate slightly by using our own ovens. You may never order this from a Takeaway again as its so easy to do. You can adapt it to suit your families tastes by making it as mild or as spicy as you like. The yoghurt cuts down on the heat of the spices and tenderises the meat at the same time. You can use thighs, drumsticks or chunks to make kebabs too instead of using a whole chicken. 00Speedy Chicken Chow MeinA cheap and cheerful midweek dinner that is always a crowd pleaser. You can adapt it to suit your families tastes by add any veg you like -mushrooms, broccoli, baby corn etc, but this is all I had in at the time. You can also bulk it out by adding beansprouts and water chestnuts too, but again, I had none in. If you like it spicy you can add a sprinkle of chilli flakes, sweet - add a little honey or sugar. It is very adaptable. Why not give this a try and let us know how you get on in the comments below. We love to hear your feedback. E x
00Creamy Balsamic Glazed ChickenChicken breast fillets are so quick and easy to cook with. They come ready sliced so your just taking them out of the container, seasoning and adding straight into the pan.. They cook in no time so by adding a few ingredients you have a speedy dinner in 20-30mns appr. How good is that? The sauce is the star of the show here and so delicious I actually wanted to lick my plate lol. This serves 2 and would be a great date night meal, but you can easily increase the quantities to serve 4 to enjoy with the family. Im sure this delicious dinner will become a family favourite in no time. It's also so easy to adapt to you and your families tastes. You can use Chicken breasts or thighs, swap the cream cheese for cream for a touch of richness and add more vegetables if you prefer. . 00Slow Cooked Cashew ChickenAnother Fakeaway meal thats delicious and I'm sure your family will ask for it time and again. Cashew chicken is a Chinese-American dish that combines chicken, with cashews and either a light brown garlic sauce or a thick sauce made from chicken stock, soy sauce and oyster sauce. As this is FYF I have adapted it slightly to our ethos of using what we have available in the cupboards. There's very little prep and the bonus is, by throwing it in the slow cooker, it leaves you to get on with your day. I used White wine vinegar instead of Rice wine vinegar and chicken breasts instead of thighs. You can adapt it to suit you and your families tastes and budget also by adding peppers or other vegetables that you prefer. The choice is yours.
