00Caramelised Red Onion and Feta Tart.Dinner this evening is a speedy, full of flavour tart with a little taste of the Mediterranean. I tend to find pastry is always in the reduced section of the supermarket, so it can be made into a very cheap dinner in no time, by adding just a few ingredients- some we always have in, plus a wee bit of cheese- in this case Feta- from a salad dish we had the day before. Why not add some chopped olives for that true Mediterranean taste? As with lots of our recipes, this one is easy to adapt to you and your families tastes by swapping out the Feta for cheddar or the red onions for white etc. I'm having with couscous and a spinach salad so didn't add to the tart itself, but feel free to add in some spinach or parsley if you prefer. 00Goats Cheese & Bacon TartletsWhen there's not much in the fridge for lunch I like to make these quick and easy tartlets. They are seriously delicious and so versatile, as you can add any toppings, but my favourite is Goats cheese. The combination of tangy saltiness lends itself so well to the sweetness of the caramelised onion and the smoky taste of the bacon. Think you don't like Goats cheese? This may change your mind. I used mainly leftovers lurking in the freezer.
Puff pastry- I used a shop bought block but the ready rolled works well too.

Bacon bits(leftovers) Tomatoes. I used cherry but any will do, and some mixed frozen peppers.
You can tailor this to suit you and your families tastes by swapping out the Goats cheese for any cheese, including Cheddar, add salsa instead of the onions or cooked ham instead of bacon etc. You can get 8/10 tarts, depending on the size of your squares/rectangles or you could make 1 whole tart and cut into slices once cooked. It is not a dish that yoi will see readily available and I don't think there are many recipes for it around and for the life of me I don't know why because it is delicious! I mainly make this in the summer as it is so light and refreshing. My family always request it when we are having a barbecue which suits me fine because I can make it in the morning or even the night before and just keep it in the fridge until we are ready for it.
