Bacon and egg savoury pancakes

A breakfast or lunchtime treat

 100 g Self raising flour
 50 g Sugar
 1 Egg
 80 ml Milk
 ¼ tsp Bicarbonate of soda
 1 tsp Oil
 For the toppings
 100 g Grated cheese
 4 Rashers of bacon
 4 Eggs
 Spring onions to garnish

Grill your bacon till crispy then chop into pieces and set aside

Sieve your flour, sugar and bicarb into a bowl

Add 1 egg and half the milk and whisk. Continue whisking and adding the milk till you get a smooth batter

Add the oil to the pan and wipe over with a paper towel to remove the excess,

Using a ladle or soup spoon add 1 ladleful of batter to the pan and swirl or tilt it until it reaches the edges of the pan

Cook on a low-medium heat for 3-4 mns until the sides begin to firm up and bubbles appear

Turn the heat down and Carefully fold the edges in a little till you make a square

Layer your grated cheese and bacon leaving a well in the middle for your egg

Add the egg-don't worry if the white spills over as you can just fold it in once cooked-And a little more cheese and the spring onions

Place the pan under the grill and cook on low for 5-6 mns till the egg is cooked through

Or carefully slide onto a baking tray and bake for 10mns.
Season with pepper and serve warm
