Caramelised onion and sausage casserole

This is a lovely dish which is . little bit different to your standard sausage casserole.

 50 g butter
 1 large onion diced
 3 carrots sliced juliene
 ½ swede sliced juliene
 1 tbsp demerara sugar
 1 crushed garlic clove
 1 tbsp tomato puree
 450 ml chicken or beef stock
 splash of worcestershire sauce
 2 large potatoes cut in chunks
 8 cooked sausages cut into chunks
 1 tin of tomatoes or 400mls of tomato base sauce

Heat butter over a low heat, add the sliced onion and gently fry for 20 minutes

add the sugar, increase the heat for 3 minutes

reduce the heat and add the carrots, swede, garlic, tomato puree and cook for 5 minutes

add the stock, tomato sauce (or tinned tomatoes) and worcestershire sauce and simmer for 5 minutes

5

add the potatoes and cook for 15 minutes or until soft

add the cooked sausages and stir through
