Chicken & chorizo jambalaya

Yields4 Servings
 1 tbsp Oil
 1 Chicken breast
 1 Diced onion
 1 Red pepper sliced thinly
 2 Crushed garlic cloves
 75 g Chorizo sliced
 2 tbsp Cajun spice or smoked paprika
 500 g Rice
 1 Tin of chopped tomatoes
 700 g Chicken stock

Heat the oil in a large pan.

Add the diced chicken and brown for 5-8 minutes.

Move the chicken to a plate.

Add the onion and cook for 3-4 minutes.

Add in the peppers , garlic, chorizo and spice and cook for a further 5 minutes.

Add the chicken back in with the rice , tomatoes and stock.

Stir well to combine and cook for a further 20 minutes.

Take off the heat and leave covered until the rice is cooked and liquid is absorbed. About 10 minutes.
