Pork Tenderloin in a Honey Soy glaze

So tasty and easy to make for a midweek treat

 400 g Pork Tenderloin
 1 tsp Paprika
 ½ tsp Garlic powder
 ½ tsp Salt
 ½ tsp Pepper
 4 tbsp Light soy sauce
 4 tbsp Honey
 2 tbsp Cider vinegar
 2 Garlic cloves chopped
 1 tbsp Oil

Put the dry ingredients in a bowl and mix together

Rub the spice mix over both sides of the Pork

Heat the oil in the pan on a medium/high heat and add the pork. Sear and glaze the pork for 2-3mns

Turn over and repeat

Don't forget to sear each side too

Mix the wet ingredients in a bowl

Add the sauce to the pan along with the chopped garlic

Turn the pork over so each side is coated with the sauce

Transfer the pork to an oven dish and bake for 20mns at 175°,turning over halfway through -after the 1st 10 mns

Bring the sauce to the boil and let it reduce till it becomes a thick glaze 3-4 mins. Taste and season if needed.Remove the pork from the oven and add it back into the pan

Turn it over to get it coated once more in the glaze then cover and set it aside to rest for 5 mns

Once rested, uncover and slice into thick slices

Serve on a bed of boiled rice and veg and spoon over the glaze

You could also serve with boiled new potatoes or Roasties.
White wine vinegar is fine if you cant get cider vinegar
