Rum n raisin braised Pork chops

An easy midweek dinner

 2 Pork chops
 2 capfuls of rum
 2 Handfuls of raisins or mixed fruit
 200 ml Chicken stock
 2 tbsp Lemon juice
 2 tbsp Brown sugar
 1 tsp Oil

Make up your stock. Add the rum,raisins,lemon juice and sugar and mix well

Place the chops in a shallow dish and pour over the stock mix. Marinade in the fridge for 30mns-1 hr or overnight

Place the pork in the cold pan and allow them to come back to room temperature for 10mns before frying.

Heat the oil on a medium heat and flash fry the pork till it gets a little colour...2-3mns each side

Lower the heat and pour over the stock,increase the heat till it boils then lower and simmer gently for 30mns,turning over after 15

The sauce will reduce so if you want more sauce add a little water
Depending on the thickness of the pork you may want to cook for a further 10-15mns

Serve warm with potatoes and veg
