Spinach pasta pesto and salmon

 400 g Pasta
 4 Salmon fillets
 1 Quantity of our pesto recipe or half a jar
 1 Lemon
 4 Handgrabs baby spinach
 Salt and pepper

Slice the lemon and sit the salmon on it , squeeze lemon juice over the top and season with salt and pepper

Steam until just cooked . Or pressure cook on s rack for 6 minutes or oven cook for 15 minutes

Bring a pan of salted water to the boil

Add the pasta and cook as per instructions

Drain the pasta , reserving a little water

Stir through the spinach and the pesto . Adding some of the pasta water if needed . Put the lid on and let it stand for a couple of minutes

Remove the salmon from heat and flake

Serve the pasta topped with the flaked salmon , a little lemon juice squeezed over and a slice of lemon
