Sweet Potato & Coconut Soup

A warming and creamy winter soup

 1 kg Sweet Potatoes
 1 Red Pepper
 2 Onions
 2 Stock cubes(veg or chicken)
 1 l tr Water
 2 tbsp Coconut milk powder
 1 tsp Chilli flakes
 1 Garlic clove
 1 pinch Coriander
 1 pinch Black Pepper
1

Peel and chop your veg

Add your stock cubes to a large pan of boiling water

Fry onion and red pepper till soft and add the garlic

In a cup mix the coconut powder into a paste using a little water

Add all ingredients to the stock pot

Simmer for 30 mns

Take off the heat and liquidise using a stick blender or leave chunky if preferred

Add S& P if needed,Serve with crusty bread.

200ml of coconut milk can be used instead of the powder

Substitute 1/2 the sweet potatoes for carrots

  1. If I was to double this recipe is it OK to reheat a portion in the microwave with it containing coconut milk and how long would it last in the fridge?
