Arabiata sauce

A spicy tomato sauce

  • Yields: 4-6 servings


3 tspn oregano

1 tspn thyme

3 tspn dried basil

3 garlic cloves minced

2 dried chilli peppers

Tin of cherry tomatoes in sauce - use plum if you can't get cherry

1 bay leaf

2 tblspn balsamic vinegar

handful of fresh basil

pinch of salt and black pepper to taste

olive oil


1Heat 2-3 tblspn of olive oil in a pan, Add the dried oregano and thyme, chopped garlic and crushed chilli peppers.

2Fry for few minutes. Don't let the garlic brown.

3Add the tomatoes and bay leaf

4 Simmer uncovered for about 8 minutes and let it reduce

5Reduce the heat, cook for another few minutes, stirring occasionally and crush the tomatoes into the sauce.

6Add pinch of salt and black pepper to taste.

7Add both dried and fresh basil another tblspn of olive oil and the balsamic vinegar. Stir.

A great dish, put your pan of water on to boil, weight out your penne, then you can make the sauce by the time the pasta cooks 🙂
