A winter warmer

 1-2 tblspn oil
 8 lamb chump chumps or 1 kg lamb neck chopped
 2 carrots chopped
 2 large potatoes chopped
 8-10 button mushrooms (optional )
 2-3 garlic cloves minced
 5-6 sprigs thyme
 3 bay leaves
 Salt
 Pepper
 Couple of handfuls pearl barley
 500 ml Stock

Preheat oven to 180c

Heat the oil in a pan and add the meat in batches and Brown on all sides

Remove to a plate

Add the carrots and onions and cook for about 5 minutes

Add the garlic cook for another 2 minutes

Tip the veg into a bowl

Put the pan back on the heat

Add a little water and deglaze the pan

Layer up a casserole dish with the cubed potatoes,mushrooms if using lamb and veg

Add thyme to each later and season add the bay leaves

Sprinkle over the pearl barley

Add the liquid you deglazed the pan with and the beef stock

Cook for 1.5 -2 hours until the meat is tender

Serve with cabbage

  1. I can’t get this to load but we’re having slow cooker stew today! I got two bags of frozen diced beef for £7 in Tesco (used the other bag for beef curry on Thursday ) half bottle of really cheap red wine (I’ll use the other half in next weeks spag Bol) 2 stock cubes glass of water frozen butternut squash frozen carrots and frozen sweet potato sage and rosemary.. just the dumplings to make later. Been in since 1030 smells gorgeous!
