Irish stew

Yields4 Servings
 1-2 kg lamb (shoulder or cheap cut)
 1 large or 2 small onions.
 4-5 large carrots cut into chunks
 2 Parsnips cut into chunks
 1.50 kg Potatoes cut into 1 inch chunks.
 1 or 2 lamb stock cubes
 1 l Water

Cut meat into cubes, and brown in a pan.

Add chopped onions, after 2 mins cover with water.

Put on lid a simmer slowly for 45 mins or until meat is tender. Add stock cubes, stir.

Add potatoes. Cook for 5 mins.

Add carrots and parsnips. Cook for 20 mins or until veg is soft.

Throw in some salt and pepper. Mix with a big spoon. You can add more water if you prefer more liquid.

Serve in bowls.
