Mint Custard

Yes it's green but bare with me . This is another blast from school days

  • Prep: 5 mins
  • Cook: 10 mins
  • Yields: 4 servings

Ingredients

2 tblspn cornflour

3 tblspn sugar

1 pint milk

3 -4 drops , green food colouring

1 tspn peppermint extract

Directions

1Mix the cornflour, sugar and 1-2tblspns of the milk to make a smooth paste.

2Heat the remaining milk gently until almost boiling.

3Pour into the cornflour paste, stirring well.

4Pour it back into the pan and put it back on the heat, stirring continuously until thickensand boils

5Turn down to a simmer for 2-3 minutes

6Take off of heat and stir in the colouring and peppermint, mix well.

7Serve with chocolate concrete
