Penny2017-09-16T23:23:11+00:00 Total Recipe Views: 9,582 Sausage and Potato Casserole By Penny Pork English September 16, 2017 Prep: 15 mins Cook: 1 hr 25 mins Yields: 4 servings Ingredients 4 large potatoes 4 carrots 8 sausages 2 tbspn olive oil 1 onion chopped 1 pepper chopped 1 garlic clove grated 1 tspn paprika-smoked 1 tblspn tomato purée Tin of chopped tomatoes 400ml vegetable stock A couple of bay leaves Fresh thyme to garnish Directions 1Heat oven to 180c 2Peel the potatoes and ca cut them into quarters. 3Peel the carrots and cut each carrot into about 4 pieces 4Heat the olive oil in a casserole dish or pan and fry the sausages, turning often, until lightly golden 5Remove the sausages from the pan and put them on a plate. 6Add the chopped onion to the pot and cook over a low heat for 5-10 minutes, until the onion is slightly softened 7 Add the garlic , tomato purée and paprika and cook for another minute. 8Add the chopped potatoes , peppers and carrots and stir everything around in the pan so that the vegetables are coated with the oil. 9Add the tomatoes and stock and the bay leaves 10 Bring to a simmer 11Put the sausages back into the mix 12Put into the oven and cook for about 45-50 minutes close full screen 00:00 10 Reviews Feed your family for about £20 a week.
