00Tomato Gnocchi with AsparagusThe full title of this is Rich Tomato Gnocchi with Parma Ham, Peperami, and Asparagus, but I thought that was a bit of a mouthful, so I shortened it 😀
This is one of those dishes that sounds posh but really isn't. It's really just mashed potato, dressed up to look fancy then I've added some Asparagus, a bit of Parma Ham and some Peperami.....yes you read that right....Peperami sticks that I found in the fridge that no one wanted any more, and I wasn't going to just throw out. They added a bit of protein and a smoky flavour to the sauce, which was lovely, and no one was any the wiser....bonus!
This is an easy recipe to adapt to you and your families tastes, and I'll add some suggestions at the bottom of the page. This amount serves 2 but the ingredients can be doubled and stretched to feed 4....or for a lower cost option, you can add some stock, and it can be turned into a lovely soup.
I've cooked this in the Ninja Foodi using the Sear/Saute setting, but this can also be cooked on the hob or in the oven.

00Paprika Hassleback New PotatoesNew Potatoes are amazing for their fresh buttery flavours, but sometimes you just crave them with a little bit of spice and that's were this Paprika spice blend delivers. It's a little touch of sweet with just the right amount of spice to pep up your taste buds. Of course you can tailor it to suit your tastes by using less paprika, or a smoked paprika, which will add an extra depth of flavour, for a bit more spice try adding some chilli to the mix, or leave those flavours out altogether, and just dress them with a little salt n pepper. This is a lovely side dish that adds extra dimensions to your humble potato. I've used the Airfryer for this recipe but these can also be done in a conventional oven too. Slicing them into hasslebacks means they cook quickly, the spice blend gets into all the little nooks n crannies, and makes them look good too, but you can leave them whole if you prefer.

E x00Loaded Hassleback potatoesThe Hassleback Potatoes were invented by a Swedish Chef at Restaurant Hasselbacken in Stockholm, and we have been enjoying them ever since. This particular style of potato is so versatile and easy to do- sliced into thin wedges but left joined at the bottom like a concertina, baked until the layers fan out into rounds of crispiness and served as is, or embellished with toppings of your choice. I had a pack of continental meat and some cheese and voila my humble potato was transformed into a feast of mediterranean flavours. Whether your favourite is a Jersey Royal or an Ayrshire tattie their earthy nutty flavoured is fantastic in salads or as a side dish to your roast dinner.This gentle cooking method also allows the full flavour of the potatoes to come through. Yes, you could boil them for 20mns on the hob or in the microwave (but I don't have one) but on hot summer days that's not ideal -who wants a hot, steamy kitchen.? so this was the better option imo.
