Arabiata sauce

A spicy tomato sauce

 3 tspn oregano
 1 tspn thyme
 3 tspn dried basil
 3 garlic cloves minced
 2 dried chilli peppers
 Tin of cherry tomatoes in sauce - use plum if you can't get cherry
 1 bay leaf
 2 tblspn balsamic vinegar
 handful of fresh basil
 pinch of salt and black pepper to taste
 olive oil

Heat 2-3 tblspn of olive oil in a pan, Add the dried oregano and thyme, chopped garlic and crushed chilli peppers.

Fry for few minutes. Don't let the garlic brown.

Add the tomatoes and bay leaf

Simmer uncovered for about 8 minutes and let it reduce

Reduce the heat, cook for another few minutes, stirring occasionally and crush the tomatoes into the sauce.

Add pinch of salt and black pepper to taste.

Add both dried and fresh basil another tblspn of olive oil and the balsamic vinegar. Stir.
