Cajun Blackened Chicken

Yields1 Serving
 1 chicken breast per person or 2 small breasts cut in half if big
 1 tspn smoked paprika
 1/2 tspn salt
 1/2 tspn cayenne pepper
 1/2 tspn ground cumin
 1/2 tspn dried thyme
 1/4 tspn white pepper
 1/4 tspn garlic powder
 1 tblspn vegetable oil

Mix all the dry ingredients

You can cut the chicken breasts into strips or leave whole

Sprinkle the rub into the chicken

4

Heat the oil in a pan and fry the chicken until it's no longer pink

Serve with rice and salad or if leaving whole try it as a spicy chicken burger
