Cheese and onion fritters

Lovely served with a dip

 2 tblspn Plain flour
 Salt and pepper
 0.5 tspns paprika
 1 egg
 Splash of milk
 50g finely grated mature cheddar
 1 finely chopped onion
 A few chilli flakes
 Oil for frying

Heat a little oil in a pan and sauté the onion until soft but not coloured

Put in a bowl until cooled

Put the flour , salt, pepper , paprika and chilli into a large bowl .

Make a well and crack in the egg .

Mix well add a little milk - you want a thick batter

Stir through the cooled onion and grated cheese

The batter needs to be stiff

Heat oil on a pan

Drop spoonfuls of the batter into the hot oil

Fry until browned then turn over and cook the other side

Drain on kitchen paper
