Cheesy , vegetable potato bake

Yields1 Serving

 500 g New potatoes
 1 pt Cheese sauce
 2 Sliced peppers
 1 Diced onion
 1 Chopped chilli
 Sliced green beans
 2 Tomatoes quartered
 5 Beaten eggs
 Spray oil
 Salt and pepper
 Mixed herbs
 Finely grated cheese to taste

Heat oven to 180c

Par boil the unpeeled potatoes until just softening . Then drain

Spray a pan with oil sauté the onions and peppers until softening

Blanch the green beans for 3 minutes . Then drain well

Whisk the eggs and gradually whisk in the cheese sauce

Spread a layer of this on the base of a baking dish

7

Layer up the cooked potatoes and veg , adding herbs and seasoning

Pour over the remaining sauce

Top with grated cheese and quartered tomatoes

Bake for about 20 minutes or until golden and cooked through
