Leftover roast chicken Moroccan style

Yields1 Serving
 Leftover roast chicken ( as much as you like)
 1 tin of chick peas
 1 tin of tomatoes
 1 onion diced
 2 cloves of garlic minced
 Zest of half a lemon
 1-2 tspns harissa paste or use 0.5 tspn ground cumin , 0.5tspn ground coriander and a pinch of tumeric
 Pinch of oil
 Some chopped mint
 1tbspn tomato purée
 A little water or chicken stock
 Cous cous to serve

Heat the oil in a pan , add in the onion and garlic , sauté until softened . Add in the harissa paste or spice mix , stir well to combine

Add in the chickpeas , tomatoes and tomato purée, cook for 5 minutes .

Now add in the chicken and heat through for about 10 minutes , added my water or stock of needed . Grate in the lemon zest .

Serve sprinkled with the chopped mint and cous cous
