Mac n Cheese

A warming creamy dish perfect for lunch or dinner

 400 g Macaroni
 500 ml Milk
 60 g Flour
 75 g Butter
 1 Leek chopped
 2 Garlic cloves chopped
 1 tbsp Mustard
 1 tbsp Cream cheese - garlic and herb
 125 g Mature cheddar grated
 3 tbsp Breadcrumbs
 2 pinches S&P
 1 handful of chives chopped

In a large pot of salted water boil the pasta for 7-8 mns

To make the roux(white sauce)- melt 60g of butter in a frying pan on a low heat, add the flour and stir it together then add the milk a bit at a time, stirring till it's smooth

In a small pan fry the leek in the remaining butter till soft 3-4 mns,stir in the garlic and chives

Assembly- drain the pasta and add to a deep ovenproof dish, add the leeks and the roux, 1/2 the cheese , the cream cheese and the mustard. Stir

Season with S&P. At this point you can adjust the thickness of the sauce, adding a little more milk if needed

Cover with breadcrumbs and remaining cheese and bake in oven for 20mns at 200°

Serve with crusty bread.
Garlic bread is amazing with this
Tip- if you have no breadcrumbs toast a slice of bread then grate or crumble it over
