Poached Chicken

 1 Chicken breast
 500 Water
 2 Garlic cloves
 1 Handful of fresh coriander or parsley
 1 stick Celery chopped
1

Pour the water into a pan and bring to a rolling boil(large fast bubbles) then reduce the heat to a gentle simmer(small slow bubbles)

Add the whole garlic cloves,celery and herbs and stir

Add the chicken adding more water to cover if needed

Simmer gently for 10-15 mns appr -the chicken will change colour from pink to cream and the juices will be clear

Remove from the pan with a slotted spoon

The chicken can now be shredded and added to soup,pasta, risotto, etc or cooled and chopped for adding to curries,pies etc or freeze till needed

Skim off the scum from the stock and use the liquor as a base for soup.

Substitute dried herbs if no fresh herbs are available. Rosemary & ginger can work well also
