Polenta Chips

Yields1 Serving
 2 cups of polenta
 3 cups of stock ( chicken or vegetable)
 1 cup of water
 1/2-3/4 cup of grated Parmesan cheese
 A little salt
 Your favourite herbs and spices ( I used fresh chopped rosemary)
 A big knob of butter

Bring the water and stock to a rolling boil

Add in the polenta and whisk , whisk , whisk

Cook the polenta for about 10 minutes , stirring well

Add in the butter , cheese, salt and herbs . Mix well

Check seasoning and add more if needed

Pour into a clingfilm lined tin , pat down and chill for a couple of hours

Heat oven to 200C

Tip out the polenta and cut into chips

Spray cooking oil on a baking tray put the chips onto it , spray again

Bake for about 30-40 minutes until crispy on the outside . Turning halfway through
