Red Lentil Cottage Pie

Red Lentil Cottage Pie with a sweet potato topping, very cheap and simple to make, will serve 4. Perfect for meat free days.

 1 onion, diced
 3 carrots, sliced
 2 peppers, sliced
 2 garlic cloves, crushed
 ½ tsp mixed herbs
 200 g red lentils
 500 ml veg stock
 50 g frozen peas
 4 tomatoes, diced
 1 tbsp Worcestershire sauce
 1 tsp Tabasco sauce (optional)
 4 large sweet potatoes, diced
 1 tbsp butter
 50 g grated cheese (optional)

Peel and chop sweet potatoes, add water to cover, bring to the boil and simmer till cooked.(10-15mins)

Meanwhile fry the onion, peppers, carrot, garlic, and herbs in the butter until soft,
add the lentils and stock, boil for 10 min.

Stir in tomatoes and the peas, and a dash of tobasco (optional) add the worcestershire sauce. Cook for 5 mins then transfer to an oven dish.

Drain and mash the sweet potatoes then spread on top of lentil mix. Add grated cheese if using, pop in oven for 20 mins at 200° or on gas mark 6.
