Spinach and Feta Puffs

A nice change to a sausage roll

Ingredients

1 Packet puff pastry
2 Bags fresh spinach
OR
0.50 Bag frozen spinach
2 Eggs
200 g Feta cheese
1 Pinch grated nutmeg
Salt and pepper
1 Small onion diced
Butter

Directions

Heat the butter in a pan

Add the onion and cook until soft and translucent

Add in the spinach and allow it to wilt / warm through

Put into a sieve over a bowl .
Squeeze as much liquid from the spinach as you can

Put into a bowl . Season with salt , pepper and nutmeg . Crumble in the feta

Add an egg yolk and mix well

Beat the other egg .
Cut your pastry into 2 strips .
Egg wash the edges

Lay a sausage of the spinach and cheese mix on the pastry .
Fold over and seal .
Cut into 2-3‚ pieces .
Place on a baking tray and egg wash the tops

Put into the fridge .
Preheat the oven to 200c
When it's hot put the puffs in and cook for 20-30minutes or until risen and golden

Cool on a wire rack
