Tomato Hummus

Perfect with crackers,on toast or as a dip with your fav veggies

 400 g Tin of Chickpeas
 150 g Tomatoes
 2 Garlic cloves
 1 tbsp Lemon juice
 3 tbsp Virgin oil
 1 pinch S&P
 1 tbsp Peanut butter(optional)
 2 pinches Coriander

Drain and rinse the chickpeas thoroughly
Roughly chop your tomatoes and garlic

Add all ingredients to your food processor or use a hand blender.

Pulse,pause and pulse till you get the desired consistency of a paste. Taste and add more lemon juice if needed.

Scoop into a bowl, cover and place in fridge for 1/2hr -1hr. Season to taste and add a garnish of spring onions before serving.This will keep for 3-4 days in the fridge.
The Peanut butter is a cheap replacement for Tahini which is expensive.
