00Pressure cooked Minestrone-ish soupA speedy,full flavoured soup bursting with goodness, warmth and all manner of vegetables. Whilst not authentic, I have made this recipe loads of times, and kept the base the same but adapted the vegetables to whatever I have in at the time, and it never fails to be a hit. You too can add or subtract any vegetables you like to suit you and your families tastes. You can add lentils or beans to bulk it out too. It really is very versatile. 00Cheesy Leek and Broccoli BakeThis can be a stand alone dish served as a main meal or a side dish to a roast or steak dinner. Its creamy, cheesy comfort food that can be adapted to suit you and your families tastes by using different cheeses. a mild cheddar for a mellow taste or a strong punchy one for a more robust flavour. You can add a little cream for a richer taste or a few chilli flakes for a little heat. You can use fresh or frozen broccoli. The choice is yours. 00Sticky BBQ Beef StewSticky BBQ Beef Stew Sweet spicy smoky beef! Perfect comfort food in cold weather. This may seem like a lot of ingredients, but don't let that put you off. Its mainly just beef, vegetables and some store cupboard herbs and spices that give this stew its deep hearty flavour. If there's something you dont have, then swap for something you do, or leave it out altogether. It's an easy recipe to adapt to suit you and your families tastes. You can add more vegetables or even a tin of beans-(baked, butter or mixed) to bulk it out too. I've used the hob this time but it can also be done in the slow cooker. 00Boozy BeefBoozy Beef served with mashed potatoes and peas is comfort food at it's best. Every party seems to have someone who will leave behind a bottle of dodgy tasting Ale (often low alcohol) that sits in your fridge for all eternity because nobody wants to try it. So here's what to do with it..... I've used Stewing beef (can often be found cheap in the reduced section) but you could use another cut if you prefer. Your house will smell like a brewery but the alcohol will cook off and its fine to serve to the whole family. You can also make this with red wine stock cubes instead of ale. Failing that use Guiness or Stout. I've used Pink Himalayan salt mixed in the flour as I find it has less sodium than table salt but table salt or sea salt is fine to use. Tip- Add streaky bacon at the start and you've got yourself a boeuf bourguignon. This can also be cooked in the Slow Cooker-8 hours on Low or 4-5 hours on high.For cheaper cuts of meat it is best to cook on Low for longer to let the meat soften. A handy hint for cheap cooking wine is don't throw away red wine that's been open a couple of days and tastes like vinegar. It may not be any good for drinking but it will be fine to cook with for weeks as long as the lid is on. You can even add the dregs of another bottle to it. Or freeze it-Pour into Icecube trays, place in the freezer and once frozen store them in a ziplock bag. Why not give this a try and let us know how you get on in the comments below. 00Linguine with Turkey MeatballsA speedy dinner that's warming and full of flavour. Its a 2 step cooking process-airfryer then pressure cook for quickness but still only takes less than 20 minutes. I've used the Ninja Foodi to cook this but it can also be cooked on the hob. I've used Turkey Meatballs as they can frequently be found in the reduced section of the supermarket. They take less time to cook too and makes this for a very economical meal. I used Boursin garlic & herb cream cheese but you can use a supermarket own brand (plain or flavoured if you prefer. I added a grated yellow courgette as you don't taste it, but it helps thicken the sauce and get more nutrients into us too, so win win, but you could use green or leave it out altogether if you prefer. 00Thai Red Chicken & Mango CurrySometimes there's nothing nicer than a bowl of creamy curry on a cold wet day. I've always liked fruity curries and as I had been given a Mango in my Pantry bag, I thought about using it in my favourite Thai curry. I found a recipe that I adapted to suit what I had available and it worked really well. It's creamy but not too sweet, with just enough heat to satisfy the taste buds without blowing your head off. I used a medium curry paste but obviously you can adapt this to suit you and your families tastes by using a milder or hotter one. You can use tinned or frozen Mango- just defrost beforehand, or If you don't have a mango just leave it out altogether, it will still taste great. The choice is yours. I used the Ninja Foodi to air fry the chicken first, as I prefer the crispy coating this gives, and then sautéed the curry itself, but you could PC instead, or just sauté if you prefer to skip that step. This could also be made on the stove or the Slow Cooker by just adjusting the method slightly-instructions are at the bottom of the page. 00Air Fryer Chicken NachosThis recipe is so versatile. It makes for a great midweek dinner....or as one of the best TV snacks ever! Perfect for movie nights, watching the footy in the afternoon, a picnic in the garden, or lounge, if the weather turns cold, or as part of a sharing platter for a midweek feast. I used Chicken but you can totally substitute this for minced beef, pork, or leave it out altogether and just have the classic combo of cheese, tomato salsa, guacamole and sour cream. The choice is yours. You could also use cooked and shredded chicken and miss out the 1st steps altogether.The fajita seasoning mix can be found on the website and at the bottom of the page. It's great to make a batch and keep the remainder for another recipe, or you can use a pre made packet mix. The final stages of the recipe are best cooked in 2 batches as you want nice crunchy Nachos, which you won't get if you crowd the pan - the Air fryer needs to circulate the air to do its job correctly. This stage take minutes so don't worry about not serving it together- just cover the 1st batch with foil for a few minutes and it will be fine. 00Chicken & Mushroom Cacio e PepeThis is a creamy one pot dish thats bursting with flavours. Cacio e pepe sounds posh but it just means "cheese and pepper" Traditionally served mixed through pasta but, as I had none, and in keeping with the ethos of FYF, I substituted it with chicken & mushrooms with a side of New Potatoes. 00Paprika Hassleback New PotatoesNew Potatoes are amazing for their fresh buttery flavours, but sometimes you just crave them with a little bit of spice and that's were this Paprika spice blend delivers. It's a little touch of sweet with just the right amount of spice to pep up your taste buds. Of course you can tailor it to suit your tastes by using less paprika, or a smoked paprika, which will add an extra depth of flavour, for a bit more spice try adding some chilli to the mix, or leave those flavours out altogether, and just dress them with a little salt n pepper. This is a lovely side dish that adds extra dimensions to your humble potato. I've used the Airfryer for this recipe but these can also be done in a conventional oven too. Slicing them into hasslebacks means they cook quickly, the spice blend gets into all the little nooks n crannies, and makes them look good too, but you can leave them whole if you prefer.
